The crown jewel of South Indian sweets, Mysore Pak has a royal history behind it. Word has it that it was concocted by the head chef of Mysuru palace, who wanted to present the king with something new and unusual. As every South Indian will attest, it is impossible to resist the charms of this golden, ghee-soaked, melt-in-your-mouth delicacy.
At our home, Paati would make it for festive occasions only. We would sit around waiting, mouths watering, as she poured the golden liquid - ‘pak’ - onto a plate. After it set into its final form, she would cut it into cubes and give us the first, choicest pieces. When you bite into this soft, crumbly confection, we hope you fall in love as we did.
